Wild Mushroom Dinner – French Classics Revisited

Saturday September 29th (5:00 pm Start)

Wild mushroom season is launched with a menu of our favourite dishes from France, mixed with the wonderful products from the Cowichan Valley. This dinner should be a celebration of fall and a tribute to the local mushrooms of the island. We will weave cepes (porcini), morels, chanterelles and a few special guests into the evening. Bill will talk about local mushrooms types and discuss foraging and preparing the fungi harvest.


Tarte pisaladiere with wild mushrooms, ham and fresh figs

Sourdough crouton with mushroom and chicken liver mousse, preserved apricots


Cauliflower and butter bolete quiche with aged island cheese and truffle

Caramelized onion soup with duck broth, smoked duck breast and cepes

Wild salmon “Bonne Femme” with leeks, wild mushrooms and herb cream sauce, served over a puree of celeriac and potato

Apple and rosehip custard tart with cinnamon-geranium ice cream


Cost $90/person (plus HST)
