Cooking Class – Japanese Farmhouse Cooking

This class will explore the flavours and techniques of rustic country-style cooking in Japan. Bill Jones is an expert in blending Asian flavours and local ingredients and is the author of New World Noodles (Robert Rose). The class is hands-on and includes a fun afternoon of cooking and eating the rustic food of Japan.

Overview of Japanese Farmhouse cooking, ingredients, tools and techniques

– Japanese Pickles (cucumber, eggplant and mushrooms)

– Handmade noodles (served with a soy-marinated, grilled eggplant sauce)

– Japaneses Gyoza (Pork Dumplings) with a pickled ginger dipping sauce

– Miso braised pasture-raised chicken, greens, vegetables and mushrooms over ginger Haika rice
